Mindful Monday#60: Celebrate World Food Day!

The Fall time is one of my most favorite times of the year because of the flavors, and smells that come out of the kitchen. October 16th is World Food Day. In honor of this day, thought I would share a recipe from one of our cookbooks. The apple crostata combines two of my loves, the apple and Italian food. A crostata is an Italian baked tart, or pie also known as coppi in Naples. A crostata is a "rustic free-form version of an open fruit tart" that may also be baked in a pie plate. Historically, it also referred to an "open-faced sandwich or canapé" because of its crusted appearance, or a chewet, a type of meat pie. To get everyone in the holiday spirit, I am sharing this recipe for Apple Crostata. I am referencing The Ultimate Ninja Foodi Pressure Cooker Cookbook by Justin Warner (photograph by Robert Bredvad). I have tried this dessert before, and it is wonderful! I hope you will think so too! 
 
Ingredients:
Juice of ¼ lemon 
4 medium crisp apples, such as Fuji, peeled, cored, and thinly sliced
½ cup granulated sugar
¼ cup packed light brown sugar 
2 tablespoons instant flour
1 teaspoon ground cinnamon
½ teaspoon kosher salt
1 (9-inch) store bought and refrigerated rolled out piecrust
Cooking Spray

  • Place the lemon juice in a large bowl. Add the apple slices and toss to coat, then add the sugars, flour, cinnamon, and salt and toss to coat the apples. 
  • Cut 2 sheets of aluminum foil 24 inches long. Fold each sheet lengthwise 3 times to have 2 slings 24 inches long. Form an “x” on the cutting board with the folded strips and place the crust on top, in the center.
  • Drop the Crisping Lid and set the Foodi to Bake/Roast at 400 degrees Fahrenheit for 10 minutes to preheat for 10 minutes to preheat. 
  • Arrange the apples around the crust in concentric circles, overlapping them slightly and leaving 1/2 – inch border around the edge (depending on the size of the apples, you may not need to use them all). Carefully fold the edges of the crust over the apples, overlapping it to form pleats. Freeze for 10 minutes for easy transfer to the Foodi. 
  • Lift the lid and spray the Foodi pot with cooking spray. Pinch the top ends of the foil sling together and carefully lower the crostata into the Foodie’s inner pot. Unfold the ends of the sling, allowing excess aluminum to stick out of the Foodi pot. Drop the Crisping Lid and set to Bake/Roast 400 degrees Fahrenheit for 15 minutes, or until the crostata is browned and the filming is bubbling. 
  • To finish, lift the lid and set the Foodi to Sear/Sauté on High and cook until the bottom crust is browned, about 7 minutes more. Carefully remove the inner pot from the Foodi and let the crostata cool at least 20 minutes. Then, carefully remove the sling and crostata from the pot and place it on a baking sheet or wire rack to cool completely before slicing and serving.
